Guys. It's Girl Scout cookie season!! If you didn't yet know, the following Girl Scout cookies are actually vegan: Thin mints, Thanks-A-Lots, S'mores, Lemonades, and Peanut Butter Patties (from ABC bakers)!
I decided to make my own healthier version of thin mints and Y'ALL - these legit taste like the real thing! I used strong dark chocolate so they tasted like richer, darker chocolate thin mints, but you can adjust the chocolate chips to your taste!
1/4 cup oat flour
1/4 cup almond flour
4 tsp maple syrup
2 tsp plant milk
1/2 tsp peppermint extract
1/2 cup vegan chocolate chips
1. Pre-heat oven to 350 F.
2. Mix both flours, maple syrup, plant milk, and peppermint extract in a food processor until it sticks together into a ball.
3. Divide dough into 8 equal pieces and flatten into 8 circular cookie shapes about halfway between 1/8th and 1/4th inch thickness.
4. Place cookies on a baking sheet lined with parchment paper and bake for 10 minutes.
5. Melt chocolate chips and dip each cookie into the chocolate to coat. Place on parchment paper and move to the fridge until chocolate coating hardens. Enjoy!
