Healthy & Hearty Easy Vegan Pesto

This post is sponsored by Barilla, but the content and opinions expressed here are my own.

I love pasta. But ever since I’ve been on a quest to eat healthier, pasta has taken the backseat in my diet.

Luckily for me, we now have SO many choices for healthy pasta! For this recipe, I will be using Barilla Chickpea pasta. Compared to other legume pastas, Barilla’s chickpea pasta has the PERFECT al-dente texture and a great taste that makes it my go-to healthy pasta in all of my favorite pasta recipes. It boils just like regular pasta and doesn’t fall apart like other alternatives.

The best part?

Barilla Chickpea Pasta is made with just one ingredient. You guessed it - chickpeas! Not only is it super tasty, but it is also an excellent source of plant-based protein and fiber.

You can find it at Target (on promo right now!) along with Barilla’s Red Lentil Penne variety.

This pesto recipe can be made in less than 15 minutes and is super hearty and healthy. No crazy or elusive ingredients here either - even nutritional yeast can be found at most grocery stores these days.

If you want a light and healthy lunch or dinner, make this vegan pesto your go-to recipe!

So, without further ado, let’s get on with it!

Ingredients (4 - 5 servings):

1 box Barilla Chickpea Pasta

1 cup fresh basil

3 tbsp sunflower seeds

2 tbsp lemon juice

2 tbsp extra virgin olive oil

2 tbsp nutritional yeast

3 - 4 garlic cloves

2. Blend all other ingredients (except peas) in a food processor until smooth.

3. Add pasta back into the warm pot and mix with the sauce.

4. Mix in peas.
